You can close this ticket. It seems the plugin interferes with our MAPI client.
I was able to find a way to fix the issue. In the main email configuration page, I just unchecked the highlighted bix in this screeen capture and everything start working again.

After further testing it seems you are right. With or without Multiple SMTP enabled, SuiteCRM shows the sender's name in test emails but does not in all other functionnality using email sendings. Which is weird but not related to Multiple SMTP.
That is what I thought at first before opening the ticket but please see a capture of a test email I sent without Multiple SMTP and the sender appears fine. See Capture004.jpg
